I looked it up and found options like Kazam, Kooha, and Blue-Recorder. Which one is simple and safe to use? Any recommendations?

If you want something professional, try OBS Studio. For a quick gif, you can use Peek.

OBS Studio (the best option)

Peek (really easy to use but limited features)

FFMPEG (more advanced, uses command-line)
